Microbial Foods Conference
On May 21, the Microbial Foods Conference was held at AlbaNova University Center (KTH Royal Institute of Technology). Researchers and students from various universities, and industry experts, were brought together to explore the emerging technology of precision fermentation and protein engineering for shaping the future of food.
The conference kicked off with diving straight into microbial engineering, ranging from designing and producing functional and sustainable proteins with microorganisms to mapping out the growing ecosystem of the research initiative from a macro-perspective. These deep-dive studies were presented by leading scientists and directors in the microbial research field.
The second session shifted focus toward innovation in the industry and real-world scaling of this cutting-edge technology. Industry pioneers from across the sector shared their journey from lab to commercialisation. Sequentially, the industry session was concluded with a dynamic panel discussion among the representatives. The speakers addressed challenges of scaling up production, navigated regulatory frameworks, and discussed growing consumer acceptance of microbially derived foods.
The event highlighted that the transition to resilient and bio-based food systems relies heavily on scientific discovery and industrial scaling. By bringing together the researchers who engineer microbial platforms and introducing these technologies to the market, the event underscored that sustainable food systems are extending from a theoretical concept to a real-world implementation.
