Research project in regenerative food design

New research project aims at innovative food ingredients and focuses on creating high-value residual products that today is used as animal feed and fertilizer.

Swedish Energy Agency has granted support to Axel Johnson Holding Aktiebolag, the Royal Institute of Technology, Lund University and the Chalmers University of Technology for the implementation of the "Over & Oat" project during the period 1 September 2023 - 31 March 2026.

The research project will investigate how okara can be transformed from a residual product into a valuable raw material. The research will focus on innovations in regenerative food design and food ingredients, but okara's potential for bio-based materials will also be explored. The project aims to initiate an industry-wide conversion through research on process techniques, circular business models and product development. The research is expected to contribute to a more sustainable food industry through reduced food waste and a more efficient use of resources.
