I am a PhD student in Francisco Vilaplana's group where my work is focused on enzymatic modification of cell wall polymers from wheat and corn bran, towards the creation of stable hydrogels. These hydrogels will be investigated for their prebiotic effect on human gastrointestinal bacteria.
